just in time for the holidays…

I give you… Aunt Neddy’s famous dish:

“Corn Casserole”

You can make this the day before, put in the casserole dish and refrigerate—then bake before serving if you want!

Use a middle-size casserole dish (2 quart) and spray with Pam before putting the mixture in it.   Pre-heat oven and bake at 350 degrees.

1 can whole kernal corn—drain out 1/2 of the liquid! (I don’t have a can in the pantry to tell you which size, but sort of like a soup can size, not a little one!)

1 can creamed corn (same size as above)

1 package Jiffy Corn Bread

Mix 2 eggs (well beaten with a whisk)

2-3 tablespoons melted butter

1  8-oz. container of sour cream

Mix all the ingredients, pour in sprayed casserole dish, bake in pre-heated 350 degree oven for 1 hour.
